Mango-Tuna Ceviche

I fell in love with ceviche when my family moved to South Texas when I was 10 years old.  I suppose that I already liked all kinds of seafood from the previous four years in Florida.  I still adore ceviche today, and am very happy that San Francisco has several Peruvian restaurants which specialize in it.

Since it was nice and warm today and I spend the day working in the garden, I decided to make some ceviche for myself.  Based on what Gus the Grumpy Greek Grocer had available (shop Haight Street Market!), I decided to make mango-tuna ceviche, and was very happy with the result.   This is not the fiercely acidic, otherwise flavorless whitefish ceviche of your local burrito joint.  Here, the tuna and avocado give you a fatty unctousness, punctuated by the citrus bursts of mango.  Click more for the recipe.

A Northwest Costal Thanksgiving Part III: Cioppino

I picked cioppino partly because it's a "one pot meal", which is an excellent idea if you're ever cooking a major meal in a rented kitchen with unknown equipment.  All I had to bring was a large wide pot, and knives.

Saffron, fava bean and shrimp risotto

For my second trick, I taught how to make a more complicated, "company" risotto for entertaining or special evenings. This one involves a lot more work, primarily because of the requirement to separately prepare a lot of the ingredients and the "stir continuously" rice cooking method.   In the picture above, it's the yellow one.  Click through for recipe.

Christmas Eve Dinner 2008

Christmas Eve was very different from Thanksgiving as far as cooking was concerned this year.  Thanksgiving dinner I had planned out 2 weeks in advance.  Christmas, I was still thinking about things on Monday.  So it didn't throw me much when dinner had to be revised and revised.  Also, we had a surprisingly "white Christmas" for Oregon; it snowed nonstop for several days, which is a rarity for Medford.  So what did all of this snow make me think of?  Why, sunny Brazil and Spain, of course!

First, I was pleasantly surprised to find Brazillian ingredients at Food4Less in Medford, OR.  So I was going to do a Brazillian feast.  However, then we invited over two new guests, who apparently were not used to "exotic" foods and both Pat and I thought Bahian cuisine might be going a little far.  So we revised it to Spanish food: salt-crusted steelhead trout, asparagus, and tortilla.  Except ... I'd forgotten about the Oregon-CA-Washington fishing ban this year.  So no wild whole steelhead.   So, instead ...
