That's somewhat dissapointing -- I've been eating at both Chapeau! and Clementine for years, and I've consistently been happier with Clementine. Chapeau!'s menu was more adventurous 5 or 6 years ago, I think, and I've not ONCE been seated on time. I hope Phillipe doesn't continue to overbook as badly as he does at Chapeau!.

Adam, You must come for late seatings, then. I've noticed that 8pm diners seldom sit down at 8pm; people always run long at Chapeau!. (I, for example, am known to take up to 2.5 hours.) We generally go early. Since Clementine has more space, I expect that it will be less booked up ... at least for a while.

Perhaps you had difficulty at Clementine because you never bothered to learn that the chef/owner was Didier Labbe. Now ... Didier was a chef ... producing varied, interesting and delicious dishes. We always were seated on time. jeaer

Jeaer, Thanks for the correction. No, I never met Chef Labbe. Apparently he's opened a new restaurant in Rio de Janiero, which (amusingly) I might actually be in a position to try in April.
