That's somewhat dissapointing -- I've been eating at both Chapeau! and Clementine for years, and I've consistently been happier with Clementine. Chapeau!'s menu was more adventurous 5 or 6 years ago, I think, and I've not ONCE been seated on time. I hope Phillipe doesn't continue to overbook as badly as he does at Chapeau!.

You must come for late seatings, then. I've noticed that 8pm diners seldom sit down at 8pm; people always run long at Chapeau!. (I, for example, am known to take up to 2.5 hours.) We generally go early.
Since Clementine has more space, I expect that it will be less booked up ... at least for a while.
Perhaps you had difficulty at Clementine because you never bothered to learn that the chef/owner was Didier Labbe.
Now ... Didier was a chef ... producing varied, interesting and delicious dishes.
We always were seated on time.

Thanks for the correction. No, I never met Chef Labbe. Apparently he's opened a new restaurant in Rio de Janiero, which (amusingly) I might actually be in a position to try in April.
